What is the latest software version?
I got (0561) 3.2.1 and was told that there would be an update around new years, but seen any.

According to this the latest update doesn't change the version number - so that's nice and clear for everyone trying to work out if their car is up to date or not.
For what it's worth, I'm mostly certain mine hasn't done this late-2023 OTA update either.

New Borns are shipping with 3.5 or 3.7, which supposedly will be available as an OTA eventually for those who have 3.2.1. As far as I know, none of the 1st gen VW MEB platform cars will get version 4.0 (which is in the ID.7, for example), which requires newer hardware. 3.7 is probably the last update we will get.
